Breakfast - Served Daily
Big Lodge Breakfast - Fresh brewed coffee when you awake. We then load up the big table with something for everyone. The center is set with fresh fruit, cereal, milk, fresh squeezed orange/grapefruit juice, and salsa. We then bring on the fluffy scrambled eggs, bacon or sausage, and biscuits or hot tortillas. We recommend everyone eat a hearty breakfast. We usually pack light lunches for the day and the boats do not return to the lodge for lunch.
On The Water Lunches
Cold Cuts - Smoked Turkey & Ham Sticks, Mixed Cheeses, Deli Crackers
Tuna Salad - Fresh Made Tuna Fish Salad, White Cheese Sticks, Fresh Grapes, Deli Crackers
Smoked Bar B Q - Chicken Legs or Brisket, Potato Salad, Sliced Onions & Pickles
Fish Bites - Fried catfish nuggets, tarter sauce, new potatoes, beans
Note: We prepare fresh lunches each morning for your day of fishing. Each lunch is packed individually, served cold and set up to snack on all day. Sweet snacks are included in each lunch. Each boat will have an ample supply of water, soft drinks, and sport drinks. You will need to request any beers for the ride in.
Tostadas Grande - Fresh fried corn tortilla halves topped with refried black beans, cheese, tomatoes, onions, jalapenos
Pico de Gallo - Salsa made fresh with ripe tomatoes, onions, serrano peppers, cilantro
Shrimp Cocktail - Boiled gulf shrimp blended with a soupy, spicy red sauce and topped off with avocado slices and cilantro
Guacamole - Made with fresh avocados and topped with diced tomatoes and onion
Tomatillo Sauce & Chips - Our own special recipe using fresh tomatillos, avocado, peppers, spices
Quesadillas - Fresh tortillas grilled with cheese, pico de Gallo, and avocado
Redfish on the Half Shell - Skin on redfish fillet oven broiled to golden brown, mexican rice and sauteed vegetables. Served with black bean soup or garden salad.
Seared Trout - Speckled trout (or flounder) fillets pan seared with olive oil and simmered in white wine and cilantro. Served with rice, sauteed vegetables, and black bean soup or garden salad.
Fried Fish Plate - Trout, Redfish, or Flounder fillets dusted with corn meal and deep fried. Served with red beans/Andouille Sausage/rice, and dinner salad.
Arroyo Chicken - Grilled chicken breast served over a black bean sauce and topped with our own tomatillo sauce. Sides include rice, steamed vegetables, and garden salad.
Chicken & Ribs - Leg quarters and baby back ribs slow smoked while you’re out fishin’. Served with baked potato and pinto beans.
Select Rib Eye Steak - A thick cut top end steak cooked Hofbrau style on a flat iron griddle. Served with baked potato, asparagus, and a tomato steak and feta cheese salad. Recommended medium rare to medium.
Maria’s Plato - A hand crafted beef chile relleno, cheese enchiladas with green sauce, refried black beans and mexican rice. Served with guacamole and pico de Gallo.

Special Note: We appreciate your group agreeing on the same lunch and evening meal each day. We can however, accommodate special dietary needs when requested in advance. We use only the finest ingredients and fresh foods available. Our menu and specials can vary throughout the season as available. The included alcoholic drinks are from the above list and during happy hour and dinner only. Any additional alcoholic drinks are subject to charges on your account.
